Tustin District’s Newest Pancake Cafe: Fluffy Fluffy

The coziness highlighted in yellow tones of the shop, the sweet scent of pastries being freshly whipped up and the pure, pillowy bliss of sinking your teeth into soft souffle pancakes are just a few of the various sensory delights you might experience when visiting the new Fluffy Fluffy pancake shop located in The District at Tustin Legacy. 

Fluffy Fluffy is a dessert cafe company that specializes in souffle pancakes. The store held its grand opening from Feb. 24-25, giving away drink coupons, merchandise tote bags and gift cards for the early visitors. Originally based in Toronto, the franchise recently established four new locations in the U.S. and five in the U.K.

The shop offers a myriad of different flavors of souffle pancakes: signature, cookies and cream, classic tiramisu, blueberry cheese, creme brulee, strawberry, matcha tiramisu, nutella banana, and raspberry caramelized. Each souffle pancake is served fresh off the griddle, so that the food is still warm when eaten. 

“The pancakes were very sweet but still very tasty,” junior Gabby Lan said. “The aesthetics of the food are nice and pretty, just like the decorations. The cafe had a very welcoming atmosphere.” 

Although Fluffy Fluffy’s main attraction is its pancakes, the cafe also serves various other pastries, such as cheesecakes and roll cakes. On top of these sweet treats, the store intends to expand towards savory foods such as croffles (croissant-waffles), according to Tam. 

Many drinks are available for order, including lattes, refreshers and frappes. The refresher drinks that we tried—the yuzu refresher and strawberry matcha latte—were both very cooling and fresh to the taste without any hints of being overly sweet or bitter, as some teas can run. 

The pancakes themselves were very sweet and were served with the toppings and sauces separate, so that the customers could cater to their own preferences. The pancakes, at first bite, radiate a warmth and fluffiness that is hard to find in your typical pancake. The serving sizes were slightly on the smaller side, but still filling. 

The only con is that Fluffy Fluffy may have significant wait times due to kitchen complications. While I had to wait over an hour upon my visit, the staff handled the situation with the most genuine hospitality. They offered free drinks as compensation and kept up with consistent communication.

Fluffy Fluffy had notably high quality products and excellent customer service, making it a new favorite. We would recommend choosing from their vast selection of signature pancakes, along with a refreshing drink. 

You can look forward to more Fluffy Fluffy locations opening and becoming more widely accessible in the next year. 

“Our brand is constantly growing and there are about ten more locations to open in the US this year, and following in the next year as well.” Tam said.  “We’re looking for more locations too, due to such huge demand.”
